Ingredients:
- 500g couscous
- 1kg meat (lamb or chicken, as preferred)
- Two chopped onions
- Four carrots
- Three zucchini
- Three potatoes
- Two turnips
- One squash (optional)
- 100g soaked chickpeas
- A handful of raisins (optional)
- 1/2 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp saffron
- 1 tsp ginger
- 1 tsp turmeric
- 1/2 tsp cinnamon (optional)
- Water for cooking
Instructions:
- Prepare the Meat and Vegetables:
- In a large pot, heat the olive oil and add the chopped onions. Sauté until golden brown.
- Add the meat, salt, black pepper, saffron, ginger, and turmeric, then stir everything together.
- Add enough water (about 1 litre) and bring the mixture to a boil.
- Add the Vegetables:
- Once the water is boiling, add the soaked chickpeas, carrots, turnips, and potatoes.
- Let the pot simmer over medium heat until the vegetables are partially cooked.
- Prepare the Couscous:
- Add the Remaining Vegetables:
- After the initial steaming, add the zucchini and squash (and raisins if you like) to the meat and vegetables.
- Continue cooking until all the vegetables are fully cooked and the meat is tender.
- Final Couscous Preparation:
- Remove the couscous from the steamer and place it in a large bowl. Add a little butter or olive oil and mix it until the grains are soft and fluffy.
- Serving:
- Place the couscous on a large serving dish, then arrange the meat and vegetables beautifully on top.
- You can drizzle some broth over the dish if desired.
Tips:
- You can add chilli peppers or other vegetables according to your preference.
- Soaked chickpeas make the cooking process faster and enhance the couscous flavour.
